I don't know the answer, Muddy, but I'm courious - is the poor cow spinning around when the train passes?

The cow rotates when a train passes (why? I don't know, I've seen a few cows in fields next to railways in my time, but I've never seen one do that!).
Akeda says that the cow crossing may also have been listed separately, but he's never seen one. No doubt

OK, I understand now, it's a technique for making butter inside the cow.
